Job Description
The Bakery Store Manager must have the necessary confidence, commitment, and motivation to encourage our team members towards success. Key personality traits & skills needed to accomplish this are: patience, even tempered, humble, observant, perceptive, supportive, decisive, flexible, analytical, consistent; and an encourager and teacher. Must be self motivated; have strong leadership skills; good listening skills, extraordinary customer service skills; applied empathy; and possess a strong sense of urgency in all duties performed.
Essential Duties and Responsibilities
Leads by example; models correct behavior and adherence to company policies and procedures
Responsible for using the tools provided to ensure the success of the store
Prepares bakery and specialty products such as donuts, breakfast burritos, makes coffee drinks, helps ring up customers
Bakes products as needed
Packages, displays, and merchandises all donuts according to company standards
Responsible for the execution of all merchandising programs
Assists with the coordination of sales promotion activities, directs team members in building and filling merchandise displays
Cleans the counters, display cases and floors as needed
Maintains the store under current health codes and company standards on sanitation and cleanliness at all times
Follows the FIFO rotation system (First-in, First-out). Covers, labels, and dates all leftover products. Utilizes leftover products before opening new product
Inspects product during baking process & preparation; including measuring temperatures throughout the preparation process, to maintain quality and sanitation in accordance with the FDA and local health departmental codes
Inspects finished bakery products in accordance to Trejo's Coffee and Donuts quality standards, presentation, & weight specifications
Follows safety work standards and reports any safety hazards to the Executive team
Documents all monthly safety training and reports accidents
Maintains shelf stock-orders and assures amounts of all orders to meet all customers’ needs
Maintains cleanliness of shelves, foods, stocking, and rotation of perishable stock
Assists with receiving, break-down and storage of product
Responsible for all new team member training documentation
Ensures proper training on weighing, slicing, cutting, and serving of donuts and breakfast burritos
Responsible for all material in the Bakery Log Book
Responsible for the maintenance of inventory control especially for theft, shrinkage, and storage
Responsible for managing costs by controlling hours used, including overtime and controlling supply costs
Responsible for providing customers with extraordinary service with a smile and a willing attitude
Answers customer complaints or inquiries in such a manner so as to ensure customer satisfaction
Follows the employee handbook at all times, especially on service standards and appearance

When we first started thinking about Trejo’s Tacos, we didn’t want to compete with the vibrant traditional Mexican food scene in Los Angeles. We wanted to find our own style, our own voice, while still paying respect to the LA Mexican food culture. With our recipes, we take authentic traditional ingredients and mash them up, bringing in influences from other cuisines and experimenting with new flavors. We see our food as representative of Los Angeles, built off historic roots, but a melting pot of cultures all influencing each other in some way.
We strive to elevate, and when possible be a bit healthier through our ingredients. We want our restaurants to be places where the community can share experiences. We give back to the community when we can. For Danny, food has always played an important role and accounted for many of his most positive memories.
From cooking with his mom, to family dinners with his kids, on-set meals with new and old friends, and of course, the immediate visit to his local taco shop whenever he got released from a prison stay (Danny doesn’t think prison food is that good). In 2015, while filming the movie Bad Ass, the producer asked Danny if he would partner with him in the restaurant business. The answer was a big “Hell yes,” and now we truly feel like bad-ass restaurateurs.
