Alfred State College is excited to take over the management of the Collegiate Restaurant, a beloved, long-standing establishment in the heart of a vibrant college town. Operating for over 100 years, the Collegiate Restaurant is not just a dining destination, it's a college staple known for its nostalgic diner experience, welcoming atmosphere, and strong community ties.

With this transition, the restaurant will also serve as a learning lab for Alfred State students, providing hands-on experience in culinary arts, hospitality management, and business operations. The General Manager will play a pivotal role in ensuring both an exceptional customer experience and a valuable student learning environment, all while navigating the restaurant's integration into the structured state system.

Key Responsibilities
1. Operational Management & Compliance

• Oversee all aspects of daily restaurant operations, ensuring efficiency, service quality, and adherence to health and safety regulations.
• Work within the Alfred State College framework to align operations with institutional policies and procedures.
• Manage inventory, vendor relationships, and procurement while maintaining cost controls.
• Ensure smooth restaurant operations during peak hours while balancing the needs of students, faculty, and local patrons.

2. Leadership & Staff Development

• Recruit, train, and manage a team that includes both professional staff and student employees.
• Create an inclusive and collaborative work environment that values learning and mentorship.
• Develop staff schedules that accommodate student workers and lab-based learning experiences.
• Conduct performance evaluations, provide coaching, and foster a positive team culture.

3. Student Engagement & Learning Experience

• Work closely with Alfred State faculty to integrate hands-on learning opportunities for students in academic programs.
• Ensure students have meaningful, structured learning experiences while maintaining high service standards.
• Balance the demands of a working restaurant with the flexibility needed for student training and development.

4. Customer Experience & Community Engagement

• Continue the tradition of warm, friendly service that has made the Collegiate Restaurant a local favorite.
• Foster a welcoming environment for students, faculty, alumni, and the broader community.
• Address and resolve customer complaints promptly and professionally.
• Develop strategies to improve guest satisfaction and increase repeat business.
• Promote the restaurant's new role as a college-affiliated dining and learning space through marketing and community outreach.

5. Financial & Administrative Management

• Prepare and manage the restaurant's budget within the guidelines of a state-run institution.
• Monitor financial performance and implement cost-control measures.
• Track daily sales and manage cash handling procedures.
• Monitor inventory levels and coordinate with suppliers to ensure timely procurement of quality ingredients and supplies.
• Oversee payroll and scheduling in alignment with both student employment policies and full-time staff contracts.

6. Change Management & Adaptability

• Lead the restaurant through the transition from private to college management, ensuring continuity in operations and seamless integration into Alfred State's structure.
• Navigate state policies, procedures, and reporting requirements, working closely with college administrators.
• Foster a positive, adaptable workplace that embraces change while respecting the restaurant's deep-rooted traditions.

7. Marketing & Community Engagement

• Collaborate on local marketing strategies to attract and retain customers.
• Represent the restaurant at community events and build relationships with local organizations.

8. Compliance & Safety

• Ensure compliance with local, state, and federal laws, including food safety, alcohol service, and employment regulations.
• Conduct regular inspections to maintain high standards of cleanliness and safety.

Job Requirements:

Minimum Qualifications

• Proven experience in restaurant management, including staff supervision and operational oversight.
• Strong leadership skills with the ability to effectively manage multi-shift teams.
• Proficiency in managing employees, monitoring staff performance, and fostering a collaborative work environment.
• Excellent organizational and time management skills to prioritize and balance competing demands.
• Ability to define problems, collect data, establish facts, and draw valid conclusions to drive informed decision-making.
• Strong ethical conduct with a demonstrated ability to make sound, responsible business decisions.
• Technical aptitude to utilize POS systems, email, and Microsoft Office programs.
• Advanced written and documentation skills, with the ability to maintain records and prepare reports.
• Excellent interpersonal and communication skills, able to develop and maintain professional relationships with co-workers, vendors, and guests.
• Ability to work flexible shifts, including evenings, weekends, and holidays, as needed.

Preferred Qualifications:

• Bachelor's degree in hospitality management or a related field

• Certification in food safety management

Position Type & Work Hours

• Schedule varies on a continual basis and requires flexibility.
• Long hours, varied shifts and weekend work should be expected.

Work Environment

• Work requires standing for long periods, operating near hot equipment (broilers, ovens), and occasional work at heights.

• High-pressure environment requiring the ability to multitask and maintain efficiency under demanding conditions.

• This position is very active and requires standing, walking, bending, kneeling, stooping, and crouching all day.

• The employee will frequently lift and/or move items up to 50 pounds, and use hands to finger, handle, or feel objects, tools or controls.

• Ability to work in fast-paced restaurant setting with varying noise levels?from moderate to loud in the kitchen and dining areas.

• Conditions may be slippery, requiring caution and adherence to safety protocols.

• Employees may experience extreme hot or cold environments frequently.
