The culinary lead cook is responsible for the proper preparation, setup, and execution of all stations and prep. The culinary work in this position must all follow Dining's commitments to sustainability and proper health and safety guidelines.
Essential Functions/Characteristics
Ability to multi-task and oversee multiple employees. Interacts professionally with other employees, customers, and suppliers.
Performs quality work within deadlines with or without direct supervision.
Works effectively as a team leader on all assignments.
Works independently while understanding the necessity for communicating and coordinating work efforts with other employees and organizations.
Cleaning Services
Cleans work areas, equipment and utensils, distributes supplies, utensils, and portable equipment.
Compliance
Assists in the implementation and follow up of proper food safety and sanitation practices in accordance with the RI Food code. Assures compliance with all HACCP food safety requirements.
Interacts with co-workers to ensure compliance with company service standards, and inventory and cash control procedures.
Customer Service
Serves customers in an efficient and friendly manner, resolves customer concerns seeking assistance from supervisors or management as needed.
Food Preparation
Ensures that all food is properly cooked, garnished and served. Follows all food production and presentation standards.
Knowledge of all cooking techniques, such as, broiling, steaming, frying, sautéing.
Utilizes approved food production standards to ensure proper quality, serving temperatures and standard portion control.
Leadership
Ensures that all cooks and prep cooks follow all food production and presentation standards.
Ensures that all cooks and prep cooks have proper knife handling skills.
Retail Operations
Follows all cash handling standards.
Set up and Preparation
Ensures that all stations and condiments are set-up in time for service.
Properly stores foods in designated areas following wrapping, dating, and rotation procedures.
Additional Functions
This position does not directly supervise anyone but is responsible for working in a team and completing task in a group setting.
FT Dining
$500 signing bonus after a 4-month satisfactory probationary period is completed.

Strong passion and motivation to create great food.
Culinary knowledge of basic kitchen practices, protocols and procedures.
At least 1 year working in a high volume restaurant kitchen, or similar working experience.
Understanding of typical culinary units of measure.
Ability to work safely with large volume culinary equipment including but not limited to slicer, large quantity mixer, robo coupe, and convection ovens.
Possess the ability to meet unit specific uniform standards for this position.
Utilize all Personal Protective Equipment's per dining guidelines.
Wear a cut resistant glove whenever using a sharp or potentially sharp tool or instrument.
Ability to follow all of Dining's health & safety standards and requirements.
