Food Services Lead

Responsible for food preparation and “hands on” direct supervision/training of KBR and subcontractor personnel. Participates in Hot and Cold Food Production, Recipe Compliance and assures adherence to Food Production/Service/Sanitation Standards. Reports to Sous Chef and Food Service Supervisor. Prepare menu items according to recipes and provide direct “hands on” operational oversight, training and supervision for assigned shift in the Dining Facility, immediately correcting deficiencies as noted. Assure compliance with KBR Policies and Procedures and the DFAC SOW to include:

Assure appropriate and required levels of approval are obtained for all actions. Assure Food Production staff is following recipes and “Taste Test” all menu items before service. Prepare food and appropriate decoration/garnish for Special Events staged in facility. This applies to Food Service Staff and individuals from other KBR organizations, vendors or subcontractors. Check all food production equipment for safe and proper operation. Report and follow up on equipment requiring maintenance or replacement.

Report and follow up on equipment requiring maintenance or replacement. Train subcontractor Food Production personnel on proper operation of kitchen equipment. Assure all personnel have been trained before operating kitchen equipment. Assure all personnel wear appropriate PPE when operating equipment or handling potentially hazardous chemicals. Review Preventive Medicine and KBR QA/QC Inspections with Food Service Sous Chef.

Correct all documented deficiencies.

Culinary or Military Dining Facility background helpful but not required.

Must have High school diploma/GED with 2

years food service experience

Must have previous experience in overseeing employees.

Must be able to obtain a UAE Work visa

Must be a US Passport holder

Additional requirements:

Must be fluent in English

Must possess passport book (not passport card) with at least 15 months of remaining validity AND with at least 6 blank visa/stamp pages remaining

Must possess driver’s license with at least 6 months of remaining validity

Must have a NAC-I

Must be able to obtain a UAE Work VISA
