Overview:

POSITION SUMMARY:

The incumbent is responsible for the overall direction of the food and beverage department including all Restaurants, Casino Beverage, and Banquets/Catering. Will promote an effective, efficient, organized, quality oriented, and profitable restaurant and beverage operations. The position ensures high levels of guest satisfaction and quality of food, beverage and service; the position is instrumental in running a progressive, creative and unique F&B experience and achieving set forth objectives and goals.

Responsibilities:
ESSENTIAL FUNCTIONS:

  • Ensures the smooth operation of a fast-paced, high volume, multiple-outlet food & beverage department.
  • Responsible for the overall front of house leadership of the Food & Beverage
  • Responsible for reviewing all staffing levels, working conditions and other matters which influence quality of guest service as well as profitability.
  • Ensures departments maintain compliance with all laws and regulations, gaming commission rules and company policies and
  • Responsible for preparing, monitoring and adhering to budgets and ensuring compliance to departmental budget Reports budget concerns / deviations to the VP F&B.
  • Creates effective cost control measures and standards to manage business levels and create a quality experience for guests consistently.
  • Negotiates items and prices with vendors ensuring profit margins are within acceptable levels. Works closely with purchasing to coordinate purchasing, receiving and or rotation of stock.
  • Ensures that all areas are complying with controls and standards, responds quickly to remedy areas that need
  • Assures staff is certified in sanitation and safety techniques and complies with all sanitation and bureau of alcohol procedures and
  • Assists the marketing department in menu planning for catering functions and events, and/or special
  • Develops food and beverage menus and concepts that can best attract gaming
  • Mentor and develop the food and beverage department by managing work allocation, training, problem resolution, performance evaluation and the building of an effective and efficient team dynamic.

      • Stays current on F&B trends as they would benefit our business, team members and guests.


Qualifications:
EDUCATION AND /OR EXPERIENCE REQUIREMENTS:

(Related education and experience may be interchangeable on a year for year basis)

BS/BA degree in related field required. At least 10 years of management experience in the hospitality, entertainment, and/or food and beverage industry. Previous Director level experience preferred.

ADDITIONAL REQUIREMENTS: (Licenses, Certifications, Testing, etc.):

  • Must obtain and maintain all licenses / certifications per Federal, State, and Indiana Gaming
  • Must successfully pass background
  • Must successfully pass drug
  • Must be twenty-one (21) years of age.
  • Must be able to work holidays and weekends, as well as flexible shifts and/or unusual hours.
  • Proof of authorization/eligibility to work in the United
  • Must be flexible schedule including nights, weekends, holidays with the understanding days off will
  • Proficient in MS Office Computer
  • Ability to sustain a high level of confidentiality and
  • Must be able to address stressful situation with guests with dignity and the utmost tact and
KNOWLEDGE OF:
